Is Instant Coffee Bad for You?

Short answer: for most people, no. Instant coffee is still coffee. The two real differences are slightly less caffeine per cup and more acrylamide per gram of powder.
Caffeine
Mayo Clinic lists 62 mg of caffeine in 8 oz of instant coffee vs 96 mg for brewed (Mayo Clinic). That can make instant a gentler option.
Acrylamide
Acrylamide forms when foods like coffee beans are roasted. A study of 42 commercial samples found an average of 358 µg/kg in instant coffee vs 179 µg/kg in roasted ground coffee, about twice as much per kilogram of dry product (PubMed). Because you use only a few grams of instant powder per cup, per-cup amounts depend on the scoop. The European Food Safety Authority's 2015 opinion identified coffee among the foods contributing to adult acrylamide exposure (EFSA).
Instant vs brewed
| Instant | Brewed | |
|---|---|---|
| Caffeine, 8 oz | 62 mg | 96 mg |
| Acrylamide (dry product, average) | 358 µg/kg | 179 µg/kg |

Practical tips
- Don't over-scoop.
- Skip "3-in-1" mixes with added sugar and creamer.
- Stay under 400 mg caffeine/day total if you're a healthy adult (FDA).
